Cousins Cousins...

We are anxiously awaiting the arrival of Cole's new cousins!  It will be any day now that this family of 3 becomes a family of 5 with the addition of two sweet baby boys!  We are praising the Lord for allowing my sweet sister to carry these twins to full term.  God has been so faithful and gracious to our family.  Laura always looks amazing and being 37 weeks pregnant with twins is no exception!  (Especially since she's wearing my H&M maternity top with my Gap maternity jeans)  We can't wait to meet you baby boys. 


Cole is going to have so many cousins as we anticipate welcoming a sweet baby girl cousin in December and another baby girl cousin in February!   We are excited about our growing extended family and all the cousins that will be so close!

A house divided.

Saturdays in the fall are football days in our house. (as are Thursdays, Sundays, and Mondays too) 

This past Saturday was the Carolina/Georgia game.  (I'm sure I don't have to tell you how it turned out) so our house was divided.  Cole go to wear USC gear since the Gamecocks won last year.   We also had 2 of my college girlfriends over to watch it with us.  I'm pretty sure we were the only people in Knoxville not attending or watching/caring about the UT game.

Menu Planning Week 2

On to another week of Menu planning... my goal is that we don't eat out as much so we can save some money in that category on our budget... There are a few repeats this week.  We got a little off last week with some extra leftovers so I didn't make everything on the list AND a few things were really yummy so I will make again this week since we have the ingredients already... 


Today: Lemon Brown Sugar Chicken
Saturday:  Game Food -- Pizza Rolls, Chicken Wings, & Onion Rings with Chocolate Chip Pie!
Sunday: Leftovers
Monday: Cube Steak Sandwiches
Tuesday: Beans & Rice
Wednesday: Chicken and Stuffing Bake
Thursday: Spaghetti
Friday:  Date Night

7 months!

My baby boy is 7 months old today!  He is getting so big and learning so many things. I love his little giggles and can't get enough of his smile.  He is weighing about 16 1/2 lbs now.

Today I put him down for a nap and when I went in a few minutes later to check on him (thinking he'd be asleep)  he was sitting up in his crib.  He just smiled and continued playing with his blanket and passy.  He had never gone from laying down to sitting up before!  I watched on the video monitor as he continued to lay down and sit up, bounce, play with his passy, grab the crib slats, etc.  over and over until he got tired and went to sleep. 


My boy is growing up!

Menu Planning

I have decided to start menu planning again.  It has been a loooooonngggg  time since I have really wanted to cook anything.  Probably over a year now.  BUT now that I am at home taking care of my sweet boy I know I need to plan dinners and shop frugally.  (which has been hard for me now that there is no Publix here.)

So this week, with the help of my far away Alaskan friend Nikki, I have been inspired to get back into the kitchen and make some yummy and new dinners for us.  She gave me lots of great recipe blogs and websites.  I was salivating yesterday as I was reading the recipes and deciding on our menu.  I even made the mistake of looking at the desert recipes late last night which made me have a strong craving for chocolate and with none in the house my sweet husband had to go to McDonald's to get a chocolate sundae for me :)

Today was our Little Gym class which means it's grocery shopping day too.  (The nice Kroger is right beside The Little Gym) so I got everything I needed for our menu for the next week and a half.  Now I'm not doing good at coupons with Kroger yet so one day I'll be menu planning and saving more money but for now just the menu planning is happening.

Tonight:  Leftovers (since I made Ray take us out to dinner last night)
Friday:  Pizza Rolls
Saturday:  Chicken Salad on Croissants
Sunday:  Hamburger & Onion Rings
Monday:  Leftovers
Tuesday:  Enchiladas
Wednesday: Lemon Brown Sugar Chicken
Thursday:  Beans & Rice
Friday: Baked Stuffing Coated Chicken
Saturday:  I have to think about this as it will be the Carolina/Georgia football game and we will be a house divided!
